Peach Cobbler with Homemade Ice Cream

This peach cobbler is sweet, juicy, and topped with a buttery, golden crust. Paired with a simple homemade ice cream that’s swirled with peach cobbler filling, it’s a dessert that brings all the cozy vibes. Best part? You don’t need an ice cream maker to make this delicious treat!

Ingredients

Peach Cobbler

  • 6-7 fresh peaches (peeled, pitted, and sliced)
  • ½ cup sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • ½ cup butter (cut into small pieces)
  • 1 cup all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup milk
  • 1 tsp vanilla extract

Ice Cream with Peach Cobbler Filling

  • 2 cups heavy cream
  • 1 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups peach cobbler filling (from the cobbler recipe)

How to do it

Peach Cobber

  1. Preheat the oven: Preheat your oven to 350°F (175°C).
  2. Make the peach filling: In a bowl, combine the sliced peaches, ½ cup sugar, cinnamon, lemon juice, and cornstarch. Toss everything together and let it sit for about 5 minutes to allow the peaches to release some juice.
  3. Assemble the cobbler: Pour the peach mixture into a baking dish (9x9 or similar). Dot the top with butter.
  4. Make the batter: In another bowl, mix together the flour, ¾ cup sugar, baking powder, salt, milk, and vanilla extract until smooth. Pour this batter over the peaches — do not stir, just let it cover the top of the filling.
  5. Bake: Bake for 40-45 minutes, or until the top is golden brown and the peach filling is bubbling. Remove from the oven and let it cool slightly before serving.

Ice Cream with Peach Cobbler Filling

  1. Mix the ice cream base: In a large mixing bowl, combine the heavy cream, sweetened condensed milk, and vanilla extract. Whisk until smooth.
  2. Add the peach filling: Take 2 cups of the peach cobbler filling (including the peach mixture and juices) and swirl it into the ice cream base. You can either fold it in gently for a marbled effect or mix it in for a more consistent peach flavor throughout the ice cream.
  3. Freeze the ice cream: Pour the mixture into a loaf pan and cover it with plastic wrap or aluminum foil. Place it in the freezer for at least 6 hours or overnight until it’s firm.
  4. Serve: Scoop the ice cream alongside the warm peach cobbler for the perfect dessert combo!
