Homemade Chicken Soup

This homemade chicken soup is simple to make, and the browning of the chicken legs first brings out a rich, deep flavor in the broth. Serve it hot with crusty bread for a satisfying meal that warms you from the inside out!

Ingredients

  • 4-6 chicken legs (drumsticks or thighs)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 6 cups chicken broth (or water with chicken bouillon)
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1-2 cups egg noodles or other pasta (optional)
  • Fresh parsley for garnish

How to do it

  1. Brown the chicken: Heat olive oil in a large pot over medium-high heat. Add the chicken legs and brown them on all sides for 5-7 minutes. This will develop a rich, flavorful base for your broth.
  2. Add the aromatics: Once the chicken is browned, remove it from the pot and set it aside. In the same pot, add the diced onion, minced garlic, carrots, and celery. Sauté for 3-5 minutes until the vegetables soften and become fragrant.
  3. Add the broth: Return the browned chicken to the pot. Add the chicken broth, bay leaves, dried thyme, salt, and pepper. Bring the mixture to a simmer.
  4. Simmer the soup: Let the soup simmer for 45-60 minutes, or until the chicken is cooked through and tender. If you’re adding noodles, stir them in about 10-15 minutes before the soup is done.
  5. Shred the chicken: Once the chicken is fully cooked, remove it from the pot. Shred the meat off the bones and return the chicken to the soup. Discard the bones and bay leaves.
  6. Final seasoning: Taste the soup and adjust the seasoning as needed. Add more salt, pepper, or thyme if necessary.
  7. Serve: Ladle the soup in
